Kerala Beef Fry( Beef Ularthiyathu)


There are a lot of ways to make beef fry. This is a recipe which my family likes very much

Ingredients

1. Beef(washed and cut into small cubes)- 1 kg
2. Ginger garlic paste- 2 to 3 tbsp
3. Turmeric powder -1 tbsp
4. Chilli powder and paprika powder- 2 tbsp(or more if you want it spicy)
5. Coriander powder- 2 to 3 tbsp
6. garam masala powder- 1 to 2 tbsp
7. whole spices( cardamom,cloves,star anise, bay leaf, cinnamon,fennel,mace, etc-3 of each)-
     grind to a coarse powder
8. chilli flakes(crush a dry red chilli) -1 to 2 tsp
9. curry leaves- 2 to 3 sprigs
10. onion(medium and sliced)- 1 1/2
11. small coconut pieces(thenga kothu)- a handful
12.coconut oil -as needed
13. green chillies- 3 or 4
14.salt

Method

Step 1

Take a pressure cooker and add beef  and ingredients 2 through 9. Add salt also. Mix well. If you want a dry fry ,dont add water. There will be lot of water coming from beef.







Pressure cook for 8 to 10 whistles and till beef is cooked well and soft. If more water is there when you open the cooker, you can keep the cooker in high flame and let the water evaporate.

Fry the coconut pieces in coconut oil and  keep aside. Drain the excess oil in a paper towel.




Step 2

Take a kadai. Add coconut oil and add a few whole spices and fry. Then add sliced onions and fry well. Then add some curry leaves and sliced green chillies and fry for sometime. Then add the beef from the cooker and mix well.


At this point you can check for spices and salt. You can add some more chilli powder and garam masala if you feel it is less spicy. Keep in low to medium flame and fry well. Dont close the kadai. keep mixing in between. Fry till the color turns dark and everything gets absorbed well and the curry is dry. At the end mix the fried cocxonut pieces and some more curry leaves and saute for a few minutes and switch off.




Serve it hot with Kappa (tapioca), rice, dosa, appam,etc.
