Mango Kalakand


Ingredients

1. Mango pulp- 1 cup(use a canned one or take a fresh mango and add sugar and puree it in a blender)
2.Ricotta cheese-16 0z
3.condensed milk- 1 small can
4.cardamom powder- 1 pinch
5.chopped niuts

Method

Combine the mando pulp, ricotta cheese and condensed milk in a big microwavable bowl. Initially microwave it for 3 mts. take it out mix well. then microwave again for 3 mts. mix. after that microwave for aprrox. 20 mts. stop and mix well every 2 or 3 mts. Or else it will get burnt. add the cardamom powder and mix well after 15 mts.
It will look approximately like this after 15 mts.


When it is finally done it should look like this.



Take a greased plate or foil and spread it evenly.

Press the chopped nuts on top of it while it is still hot.  once it cools down cut it into square pieces.



For this I have used fresh mango pulp.
 If you use canned pulp, it will be of a darker color as below.



If you find the microwave method difficult, just combine everything in a kadai and stir it on stove top till the moisture is absorbed. You have to stir it continuously so that it doesnt get burnt.

Variations
1. You can take fresh paneer from 4 to 5 cups of milk and use it instead of ricotta cheese.
2. If you omit the mango pulp, it becomes the plain kalakand.
